YUMMMMM – CREAM OF CAULIFLOWER SOUP: This is one of my favorites soups, I cook it all year round. If you don’t have a Smart Stick, get one or use your blender to puree. Steam head of cauliflower in 2 inches of salted water until tender. Drain remaining water and save. Trim core and remove. Cut cauliflower into small pieces and add 2 cups of chicken broth (you can use saved steaming water if strict vegetarian). Use Smart Stick to puree right in the pot. It’s sooo easy. Add 1 cup of heavy cream and 1/2 cup of grated parmesian and blend until smooth. Add salt and pepper to taste. Pour into serving bowl and drizzle olive oil on top. Sprinkle curry powder and a little paprika for a pop of color and flavor and your guests will think you are gourmet chef….and now you are. Bon Apetite
